Holiday time Flan

In my house we usually make flan around the holidays so we started to get with the creamy goodness!  Easiest dessert on the world, in my opinion... Here's the recipe,

6 egg (3whole and 3 yolks)
1 can of evaporated milk
1can of condensed milk
1can of milk ( I just use one of the cans I just poured out.)
1tsp of vanilla extract
1tsp of ground cinnamon Then whatever mold I'm going to use, i pour caramel. homemade or bought in the bottom enough to cover the bottom. Then I pop in the oven conventional bake at 350°f for about 20 -30 min or until the knife/toothpick come out clean. I hope you enjoy!

Cake cake and cake and cake!

So i  DO NOT like cake... nope. cookies and cupcakes i can do, well cupcakes its a hit or miss, but Dominican cake i can eat All day! i dont know what it is, the pineapple fillling the moist batter (all the butter) but i adore the cake and the Frosting!!! dear lord! I cannot explain to you how much i love this cake! but i never can make it right but i found a recipe that sounds promising and a cute lil article in Latina magazine telling you the secrets of the cake... i will try this and see how i make out ill post pictures later!!!

More greens

I think I'm going to try these. kind of like a wilted salad... I really don't know how but I'm going to try and eat more greens for the iron. Spinach is getting boring.

LIVER free and Die hard.... maybe

so... Severe Anemia. Yea... WTF!? i didn't know that you could get any worse than Anemia but noooooo iI had to go and get the SEVERE kind SERIOUSLY!? well anyways this is a food blog so lets get to the grub.

long story short i had an infection on my face a lot of antibiotics were prescribed so my mom and I assumed it lowered my red blood cells. I don't know, I don't have DR before my name but it makes sense to me since it happened after the antibiotics were prescribed. I was on 3 different ones, that I know of but they gave me a shot and some through an IV, also.

Well again back to the food that I never got to.
About a week after I finished the pill antibiotics I was getting really dizzy even blacked out once,I was sleeping all day and breathing hard and chest pains (which possibly could be angina. yea I know.) I could barely stand and my skin was looking kinda like a zombie and I was chewing alot of crushed ice, all kinds of crap.  My mother thought it would go away after a while  and frankly so did I.  she asked her friends that sells natural organic supplements so she gave me some pills called forever bee pollen, that taste like elephant poop (im serious),  I started feeling better, mom said she didn't think I was getting better quick enough, for someone that could be getting a job soon. she went into to "Mommy Mode" and started gathering products to make this  weird drink that has iron super powers,  she even make a "funny" she said i was going to become Iron woman (mom jokes..., *rolls eyes*) she gets calcium powder, molasses,  achiote molido  aka  ground annatto, that's some of the stuff that i saw, there's also other stuff such as Malta India, iron powder, honey that stuff is for the weird drink, then the normal stuff like beets (which i like.) spinach, carrots, pineapple, cranberry juice that's just the stuff that we don't buy on a regular but eggs and such. but then she stopped at the butcher... and asked for liver. *cringe*

We got home from the grocery store and I whipped out my juicer, I peeled the beets and the carrots cut them small enough to fit through the mouth of the juicer. Beets have a real "earthy" flavor (dirt flavor) especially when raw. so after those are juiced i mixed it with grape juice and cranberry juice its not much better but its bearable. my cousin Jillian gave me powder supplements  that are called Greens, they were berry flavored made it taste alot better.  another thing i did was  i boiled a whole beet with sugar and honey and render down the juice after the beet is cooked chopped the beet in cubes and use that in my spinach salad.

 All of a sudden I smell blood and raw meat *gags*  my mom is washing the liver with Lemon juice and water then she soaks it in lemon juice and alot of minced garlic, salt and oregano. i love garlic LOOOOVVVEE it, so I figured since I've never tried  liver I can probably be the small percentage of people that like it like my mother or my cousin Jeremy also some of my friends. alot of people don't like the metallic after taste or the texture so i was hopeful that i could like it.

She started to cook it and it smelled so... gooooood, I mean I was watering at the mouth. She comes into the living room where i was on the couch feeling like a piece of Caca and she is eating a large piece and she asks  "want some?" I shrug and say "sure."  she gives me a small piece, about the size of a medallion and I think to myself I can do this, the metallic taste comes in but its not what bothers me, the Playdoh texture messes me up!  I figure I can muscle through it.  I started to get hungry and I figured there was no time like the present, to try it so I go serve myself some plantains and I grab the smallest piece of liver and cut it into smaller than bite size pieces.  Deep breaths, I sit back down on the couch and stare at the plate for a minute  I stab a nib of liver and a bit of the plantain and put it in my mouth..chewing...chewing and a hard swallow phew... 1 down who knows how many to go... so 2 down. sweat on my brow. 3. tears in my eyes and 4 I start to feel it repeating on me. 5 comes I tell myself "you can do it, come on this will make you better."  my mom looks annoyed and says " if you cant do it then don't!." and then grumbles something under her breath.  I take the plate to the kitchen and drink the largest cup of water I can get my hands on. I end up not eating anymore of the liver my mom bought. The rest of the time  she tries pretty hard to get me to eat it but no cigar mom, sorry, i i manage with supplements beets and a lot of spinach. any red meat too.

Food truck

Chow food truck :)


i went to the twilight series for Kid Cuid of course (yay!) and wasnt feeling so crappy (diabetic problems)
anyways i need to eat so we went to the little food area they had and i went to the first food truck there
 called Chow, i believe it was asian themed one of the few that wasnt serving sandwiches or their version of
 a Mexcian taco... nothing wrong with that i just didnt feel like Mexican so as i read the menu of this food
 truck  BTW i LOVE food trucks  LOOOOOVE! 

it had fried Calamari (omg!) everything else did sound delicious  like 
lemon grilled chicken something or other and a bunch of other things that sounds great but i didnt want. so 
i ordered a coconut water (hydration is key!)and a calamari plate. the service was a little slow to notice me 
but once i ordered i paid 10$ and waited 5 minutes total. it was DEVINE! so good it had a lemon cilatro seasoning
 and was perfectly flas fried i couldve died there i ate the whole thing by myself or tried b/c my sister was trying to eat some too. i wouldve taken her finger off if i wasnt
trying so hard to finish it by my lonesome. they even served it with this side sauce i couldnt really make out, it reminded
me of frysause the way it looked at least but the calamari didnt need i tell ya! sigh i think next thursday i will have 
another one and maybe a taco after all. i do recommend you go try the calamari or anything at their truck at that it was great!
the people on the truck were very nice slow to recognize me but all the same genuinely nice people so if you ever see the
CHOW food truck go grab so grub.

Lil canoes

Today we made canoitoes. Basically sweet plantains filled with meat. Pretty simple stuff.
I started with 1lb of ground beef. Usually calls for ground pork, but I use what I have available. ^_^  I cook it the usual way I always do ,bell pepper, cilantro cubes, onion chopped finely, and minced garlic, with boullion cube and a Lil soy sauce instead of salt.
Then I cut  4 large yellow plantains in half I deep fry them but not enough to actually cook them through. Just enough to crispy the outside.
After the are fried I cut the open down the middle. I fill them with the ground meat and top hem off with shredded cheese. I use sharp cheddar but use whatever you like.
I place them in the oven at 350° f  for about 15 minutes or until the plantains are cooked through.  I enjoy them with white rice and a green salad but once again feel free to eat them with what ever you like! ENJOY!

celebration dinner

My dads birthday was on the 4th and my Big brother Carlos has recieved an amazing opportunity to move to Georgia by getting a scholarship to an art school! the dinner was a perfect event to celebrate both. My aunt had thrown him a birthday party for him on the Saturday before but me and my mom had already had a small family dinner planned for him the Friday after his birthday so we didn't want to cancel the plans we had already made.

We decided on pernil (pork shoulder) white rice and mofongo (plantains fried pork fat aka chicharones and garlic) and a small salad.
Just so you know at celebrations we usually have arroz con gandules with the pernil but we wanted to stray from that. I love family get-togethers for the simple fact that i get to cook larger portions and try to something a lil different.

My dad seemed a lil irated when he got home but when he found us all hiding in his room and yelled "SURPRISE!" his demeanor changed and that was a relief , we wouldn't want the man of the hour to be uncomfortable at his event.

so the pernil is probably the easiest out of the rest besides the wait time, that's the hard part.
what you will need:
6lb pork shoulder nice layer of fat  bone in.
1 clove of elephant garlic minced (it exists, its a root!)
1 1/2 cups of lemon juice from the bottle or fresh squeezed
2tbs of salt but its up to you on how much salt you want to use
2 1/2 tbs of ground oregano

so after you have your little assembly line soak that bad boy in the lemon juice we usually just place it in an aluminum oven tin. stab it with a really large knife (kind of  like the one from the classic movie Psycho.)  stabbing it just makes little flavor pockets so that while it cooks it distributes thru the meat.
then i rub the garlic in to the meat, like a massage :)then sprinlke the oregano and do the same. obviously you make sure the yummy fat layer is facing up so as it cooks it melts into the meat! (drooling) place in oven for 4-5 hrs at 350 dergrees.

the mofongo is harder becuase it has multiple steps but 1st things first
what we used.:
6 green platains
i elephant garlic and 6 regular cloves of garlic
1 ib of bacon or chicarones (go to a latino butvher dont buy then at the closest 7eleven)
salt to taste

peel all the plantains and cut them in to 1/2 inch pieces then deep fry them til golden brown, once the garlic is all minced use 1tbs of the oil you used to fry the plantains to cook the ). in a large pilon (mortar and pestle) mash the plantains til they break up and start adding to garlic by the teaspoon after you add all the garlic start adding the chicharone and also mash it up in the pilon as you mash up everything the pilon will srart filling up so start to place it in an aluminum oven tin, once its done put the tins in the oven with aluminum foil just to keep it warm.

White rice! too easy...
FYI-* in my house we measure the rice with coffee mugs so when i say 2 cups be aware i mean coffee mugs.*
2 cups of rice (long grain)
3 cups of water
1tbs canola oil
1/2 tbs of white vinegar
salt to taste
and drop it in the rice cooker, make sure to give the rice a good wash b.c if you dont it will look very milky so WASH IT.
